Similar to flank steak, bavette is flavorful and best served medium-rare. It's excellent for grilling and works well in a variety of dishes. A very marbled cut with a loose texture that holds onto its juiciness after preparing. Bavette is a cut from the lower chest of the beef and has long been referred to as the “Butchers Cut”.
